My Favorite Granola Recipe
12 cups steel-cut oats (not quick oats!)
6 cups assorted nuts (cashews, walnuts, pecans, almonds...)
3 teaspoons nutmeg
1 1/2 cups honey
2 sticks butter
6 teaspoons grated orange zest
1 1/2 teaspoons vanilla
4 cups assorted dried fruit (apricots, dates, cherries, peaches...)
Preheat oven to 350. Mix oats and nuts together and spread on baking sheet, bake for 15 minutes. Mix butter, honey, nutmeg, vanilla, and orange zest together, and then stir into oats and nuts. Return to oven for 20 minutes, stirring frequently. Remove from oven and stir in dried fruits. Continue to stir until cool. Make sure granola is completely cooled before storing or it will be very sticky. Enjoy with milk, yogurt, or in handfuls!
